
Preheat oven to 375 degrees Fahrenheit.
Whisk sugar and eggs together for 10 - 15 minutes until tripled in volume and almost white. Add lemon zest. Whisk flour and baking powder together and sprinkle onto egg mixture. Gently but thoroughly, fold in flour mixture. Do not overwork the batter. Let rest at room temperature at least 15 minutes, up to several hours.
Brush madeleine molds with softened butter. Sprinkle flour over, and shake off excess. Fill molds 3/4 full with batter. Bake 10-12 minutes until the tops spring back when pressed. Remove from molds and cool on rack, design side up. If desired, sprinkle with confectioners' sugar while they are still warm.
